Breakfast Recipe Inspiration
I purchased the 50 Paleo Recipes by Rebecca Baron at My Natural Family and was pleasantly surprised by the recipes I found there. I am not too familiar with Paleo but have changed my diet incorporating some of the same food limitations as Paleo. I was looking for breakfast ideas.
I had been making ham and cheese wrapped eggs because I could make a bunch and then heat them up when I needed them. But I wanted to make a change from the same recipes day after day. In the paleo recipe book, there was an egg muffin recipe that looked both easy and tasty. While I didn’t have all the ingredients on hand, the recipe provided me with inspiration to try something new.
Here’s my breakfast recipe:
- Preheat oven to 400° F.
- Beat 12 eggs and add some (sorry, I didn’t measure) almond milk.
- Put veggies in each muffin tin (I did not grease my silicone muffin pan (affiliate link), but I’d recommend greasing the pan if you have a regular pan). I made four of each: kale, spinach, and sautéed leftover veggies. The kale and spinach I had were frozen.
- Top with shredded cheddar cheese.
- Put in oven for 30 minutes.
I was pleased with how they turned out. I liked my sautéed veggie egg muffin because it was full of the seasonings I had added, but I liked the taste of the other one I tried. The recipe in the book has seasoning and looks like a great recipe–something I will try when I have the ingredients on hand.
I look forward to trying out some new recipes. Since paleo is gluten-free, I have more recipes to try my husband can enjoy too.
